Chantal 9-Piece Copper Fusion Cookware Set, Chili Red

After about a year of research - talking to friends, buying "tester" pans (from Le Creuset, Lodge, Calpalon, All-Clad, etc) and talking to a few chefs, I ultimately decided to ignore all the suggestions and went ahead and bought these pans. They could supposedly go from gas to electric to induction and even in the oven, didn't need "seasoning" or complicated cleaning techniques; they could just go into the dishwasher, and the reviews were pretty good. When I received these pans in August I was a bit disappointed with them on first glance. The welding marks are easily seen, the handles for the lids look like the type to hold water in them, etc etc. I'm glad to say I was wrong.These pans are lovely. They can be a bit tricky to clean if you don't do it immediately after cooking, but we solved that by having a kettle of water on the boil whilst cooking. Plate the food, pour the water in the pans and let them sit whilst you eat, and when you get around to rinsing them the food just lifts off - even with eggs. Then just throw in the dishwasher with everything else. It's even less effort than my old non-stick pans. These do take a bit longer to heat up, but once they do, the heat is even and they are very responsive to changes, even on an electric/ceramic stove. Fissler Intensa Series 9 Piece Cookware Set

I purchased the 9 piece Intensa set a year ago, looking for cookware that was compatible with my portable induction cooktop. I was impressed with the quality of the cookware, with its thick evenly heating base (I have gas as well as induction), its cleverly designed lids that attach to the rim of the pot, the unique way the pot is completely sealed if the lid is placed at a certain orientation, and the pot is vented if the lid is rotate 90 degrees from the completely sealed orientation. I will often cook my sauces with the lid in the vented position, then when the food is cooled down I will place the lid in the completely sealed orientation and place it in the refrigerator (I know, you shouldn't store food in your pots, but it is just too convenient!). It has another feature that while it sounds useful, it has its drawback. Fissler advertises that the Intensa set has a unique temperature indicator built into its lids "Thermostar" indicator which changes color when a certain temperature is reached inside the pot, and expands the color even more when a higher temperature is reached. I really don't find it precise enough to be that useful. Also it is probably the indicator which causes the manufacturer to caution that the lid should never be placed in a dishwasher. Since I never wash my pots and lids in the dishwasher anyway, it doesn't affect my enjoyment of this quality cookware.As a comparison, Fissler recently released its beautiful Solea line of cookware. BonJour Copper Clad 10-Piece Cookware Set

I bought the 10 piece set online for $795....shipping included. They arrived in less than a week and I'm quite happy with this set. I looked at the All-Clad copper clad set in stores and held them and they obviously felt heavy and substantial, but these puppies are HEAVY!! The curved handle feels a bit more comfortable than the straight All-Clad handles. The other difference is the All-Clad frying pans have a more slanted side. These are rounded at the bottom corners and come more straight up from there. The BonJour set also has the more rounded lids which I personally like, and they have nice, high handles so you can get your fingers under there when lifting, especially with a potholder or mitts. I'll admit I'm a bit of a novice at this, I've had several Calphalon non-stick sets and those were nice, but these pots are at least three times heavier. Did I mention they were heavy? From what I had read about the BonJour set, the bottoms are supposedly thicker than other clad pots, but they never really gave any detailed info about what brands they were going against. However, from one source, at least, the copper inside the BonJour pots was a bit thicker than the All-Clads. Visually, the All-Clads have that copper ring around the side which I didn't really care for, but that's a matter of personal taste. The BonJour set has the copper core visible around the lip when you look directly down at the top of the pan. You can see clearly the separate layers of aluminum and copper around…

All Clad Stainless Steel 14-Piece Cookware Set

Read upon induction after we lost the burner and then the glass top cracked getting up a radiant heat cooktop. Induction info impressed me. Better than gas and more efficient than eletric competion. The pans are the best easy to clean; no scratching using soft rubbing. Must keep them lightly greased because it cooks so much hotter than all else. It will boil water in less than 60 seconds for small to medium pans two minutes for large. Loveit and cook much better. Smiles from all.

All-Clad Copper Core 7-Piece Cookware Set

Over the years I have used a variety of cookware--aluminum bottomed stainless Revere Ware, Magnalite Professional, Calphalon, Calphalon Professional NonStick. When I finally had to throw out the last of my tattered collection, I started to look for some stainless cookware that would stand the test of time and offer performance to boot. I decided to splurge on this All-Clad Copper Core.One of the pieces I recieved was this 1 1/2 Quart saucepan. What a workhorse this one is! Rice to soup to lentils to barely to country gravy, it gets used! The most used of all my Copper Core is this little pot!Delighted to report that I am THRILLED with this expensive splurge! All-Clad is NOT about expensive hype and status, those these pans are beautifully made, instead they do everything cookware should, and have literally changed the way I cook. Having attended CIA and worked as a professional chef for a few years, I know the golden rule for food not sticking: preheat pan, add oil, let oil heat for 5-10 seconds, then add food. Using these guidelines with the Copper Core, nothing sticks! And I mean for some things, like omelets or fried eggs in the 10" frypan, the performance is as good as my brand new Calphalon NonStick was; when you can just slide omelets and fried eggs out of the pan without ANY sticking at all, why would you ever need Nonstick or Teflon based products?!However, these pans are also superbly capable of developing a fond on the pan bottom for deglazing and subsequent sauces;…

Mauviel M'Cook 5210.04 9 Piece Cookware Set, Cast Stainless Steel Handle

I have been making do with bargain basement pots and pans my whole life. Buy them at a yard sale or the big box store and then throw them away when they start shedding non-stick surface. I decided to really go all out and buy something that would last me a long time. I knew nothing about Mauviel (I couldn't even pronounce the name properly). I like their copper pots but didn't want to have to keep them polished. So I decided on the new stainless. I love this cookware. It heats evenly, it's easy to clean (it's supposed to be dishwasher safe but I just wash it in the sink). It feels good in my hand. I'm a big guy though so it might be a little heavy for some. It's just a wonderful experience to cook with these pots. I am definitely recommending them to anyone who wants a high quality cookware set. Oh, and nothing gets a five.

This is the very finest cookware made. It's expensive but worth every penny. The quality is evident in the heft and feel of each pot and pan. When you get into the larger pots, it is almost as heavy as cast iron.This line of cookware is truly the Ferrari of the kitchen. The copper responds immediately to any temperature input. So if you are a casual cook who does not tend to pay close attention to what's going on in the pan, things can go wrong quickly. But if you are an accomplished cook, cooking with Bourgeat is like taking a Ferrari to it's limits on the track.I've been using Bourgeat copper cookware for nearly 10 years. Le Creuset Cookware Set , 20 Piece

There was a bit of sticker shock involved, but the 20 piece Le Creuset cookware set has performed well so far. Easy to use, easier to clean up, and all the pieces look fabulous.We originally bought the set for induction cooktop compatibility (since most pieces are enameled cast iron), but in truth these are great pieces no matter what type of stove one has.Heads up - several pieces are stoneware, so those particular ones will not work on induction cooktops - they work great in the oven, though!

Scanpan CTX 10-Piece Deluxe Set

I currently just sent an email to Scanpan to figure out a solution to this problem. I've used my pans once or twice and they're turning brown on the outside... there is no way I can clean it off. It looks horrible! I never had an issue like this with pans before - and I would always buy cheap pans. I was so hopeful for these pans. They cook great, but now I don't want to show them off.Update 7/6/11After showing Scanpan photos of my problem they told me it looked like I was using them on a high burner - which I assured them I've only been using the medium to low settings (which the instructions say to use). Needless to say they said that in order to keep them the same silver color I would have to use metal polish on them. I did this... and I have to do this EVERY TIME I use the damn pans. I give up at this point. They are great to cook with - but if you want them to be displayed and look fabulous - don't bother.

Viking VSC1013 10 Piece Stainless Steel Cookware Set

I, too, was contemplating buying All Clad. I bought a piece of All Clad and a piece of Viking. The All Clad is much more flimsy and looks like a toy set compared to the Viking. The All Clad stained from steaming veggies the one time I used the pan. I returned it the next day. I love the Viking. It cooks evenly and cleans-up like brand new. My husband and I gave a set to ourselves for Christmas. We have already added the roasting pan, which is being discontinued. It was on sale and it is absolutely amazing. It is a substantial weight and a perfect size for anything you have to roast. I cannot say enough about this set..If I had to say a drawback, it would be that this cookware cannot sit in a cabinet hidden-you really must hang these
